While changing it into an indirect form, we consider following rules. –
Said remains unchanged.
Conjunction – That
The given sentence is in simple past tense.
Past simple (Subject+V2+Object) changes into Past perfect (Subject+had+V3+Object)
The sentence thus formed is – Ritesh said that they had been celebrating his grandfather’s birthday the previous day.
